An Introduction to Milk: The Mystery, the History, and the Microbes

This seven-part, lab-based unit, developed by ABE San Francisco Bay Master Teacher Fellow Sarah Yearby, uses milk as a model to explore concepts in biochemistry, microbiology, and biotechnology. Students investigate milk’s cultural significance, chemical composition, and bacteria using real-world lab protocols, including the Bradford assay and Benedict's assay. Designed to deepen content knowledge and lab skill mastery, this unit supports both beginner and advanced learners and can be implemented as a full sequence or standalone investigations.
